Axiom Engineers: Commissioning

CANNERY ROW BREWING COMPANY (CRBC), Monterey, CA

CRBC occupies a 12,000 sq. ft. historically registered, brick cannery building just off Monterey’s Cannery Row. This project gutted the interior space, and built out a new kitchen on the main level. The finished project includes a banquet room on the lower level, bar and dining room at street level, and office space on the upper floor, as well as patio seating with radiant heaters and fire pits.

All of the mechanical equipment had to be located indoors to maintain the exterior appearance of the building. The large openings that give diners a view of the activities in the kitchen, proved a challenge when trying to capture the fumes from the wood fired smoker. For ease of maintenance, the exhaust system uses round grease exhaust ductwork, with conveniently located piping to allow for steam cleaning.
